Jam Pennies
Jam Pennies are said to be a favourite of HRM Queen Elizabeth II. They are a beautiful sandwich buttered, filled with raspberry jam and cut into little circles the size of an old English penny…..hence the name, Jam Pennies.
The first time I made Jam Pennies, Lulu & Sebastian were so intrigued. The kids have triangles and they have soldiers, never before had they had Jam Pennies. We ate all of the sandwiches and the off cuts! The day I made these, there was a heatwave in London,this helped the butter merge with the raspberry jam. This was not intentional, it was a result of the heat and the lighting.
I like tradition and creating memories. Many of our family traditions have been influenced by both Darien and my childhood growing up in Australia. Both Lulu & Seb were born in London, so its a lovely new tradition, we will cherish for years to come.
Ingredients
Loaf of white sliced Party Bread (or sliced bread of your choice)
Sweet Tip Tree Raspberry Jam (Raspberry Jam of your choice, this is my favourite raspberry jam)
Spreadable butter
Method
1. Remove 2 slices of the Party Bread (or standard square bread). Cut the crusts from the bread using a serrated knife.
2. Lightly spread the 2 slices with butter.
3. Spread 1 slice with raspberry jam all the way to the edge.
4. Then sandwich the bread together, lining up the edges.
5. Using a round pastry cutter, press down onto the bread firmly to ensure you have a clean cut against the chopping board. Push your fingers through the top of the cookie cutter to help release the Pennies and place on a serving plate.
6. Cover the serving plate with cling film until they are ready ro be served (the clingfilm will help stop the sandwich drying out).
Top Tips
- Use good quality fresh bread, butter and raspberry jam.
- Keep the chopping board and the cookie clean. You will find jam and butter will ooze out the sides at times.
