Make Faux Buttermilk
Faux buttermilk can be created by combining full fat milk with either white wine vinegar or strained lemon juice. Although the consistency is different to shop bought buttermilk, the faux buttermilk will react in the same way and give you the same results. I always have a bottle of white wine vinegar to hand, so if I need to make faux buttermilk I tend to use this method.
Prepare the faux buttermilk in advance as it will need time for the reaction to take place and for the milk to come to room temperature. I tend to make the mixture before preparing my cake pans and measuring out my ingredients.
Faux Buttermilk using lemon juice
120g full fat milk (whole milk)
1tsp strained lemon juice
Faux Buttermilk using white wine vinegar
120g full fat milk (whole milk)
1tsp white white vinegar
Methiod
1. Simply measure out the milk, then add either the white wine vinegar or the strained lemon juice. Stir, then leave the mixture to rest (10-15 mins). You will notice in the images below, the milk appears to be slightly curdled and thickened, this is normal. Do not be alarmed. Simply stir the mixture before measuring out your desired quantity. If you are using all of the mixture, include the lumps.
Will my baked goods taste of white wine vinegar or lemon? The answer is no. The baked goods will have a slight tang from the acidity from the white wine vinegar and lemon juice however they will not taste of lemons or vinegar.
